Convert Land and Livestock Together Where You Can
Converting land and livestock together is the preferred approach and avoids separate animal periods.
The standard states a clear preference: simultaneous conversion of livestock and the land used for raising their feed and fodder within the same unit should be the preferred approach. Land for feed, fodder, pasture and grazing must itself be certified organic under the crop production rules.
The species-by-species periods below apply only where land and livestock conversion is not simultaneous. If you are planning a new unit, converting both at once avoids this table entirely.

Periods range from 6 weeks for eggs to 12 months for bovine meat.

Rabbits and poultry meat work differently from the rest. Their "period" isn't a countdown you wait out — the animal must be under organic management from almost the start of its life (second week for rabbits, second day of hatching for poultry). You cannot convert a grown bird.
Where the Animals Must Come From
Animals born or hatched on organic farms; others serve the conversion period; no landless production.
The standard sets two sourcing rules: animals must have been born or hatched on organic farms, and livestock or poultry raised on non-organic units must go through the prescribed conversion period above before their products can be certified.
Landless livestock production is prohibited. If the operator has no organically managed land and no written cooperation agreement with another certified organic operator, the operation cannot be certified at all — no conversion period fixes that.
Feed During Conversion
Fodder from land with at least 12 months of conversion counts as organic feed.
One detail that catches people out: fodder grown on land that has completed a minimum of 12 months' conversion can be treated as organic for feeding purposes, even though that land isn't yet certified for crop sale. That makes it possible to feed compliantly while your own fodder land is still converting.

Identification You'll Need in Place
Every animal, herd or batch carries a unique identification number.

Large animals — cattle, buffalo, sheep, goats, pigs — need an individual number in the form of a tag, while poultry and small mammals are identified by herd, flock or batch. Printed ear tags, RFID tags, barcodes or any other clearly visible tag are acceptable.
